Healthy Banana Muffins

Let me start by saying I’m a cook type of girl, I love to throw things together and create something beautiful, baking though, requires a lot more precision than throwing things together. Measure this, sift that, packed sugar, stir lightly etc. Not my cup of tea. Add into the mix trying to swap out ingredients to try and make it healthy… err

But I did it, and it worked! So my friends never let anything deter you, impossible is nothing! *Drops Mic*

OK so let’s get into today’s star. These delicious Healthy Banana Muffins. Swapped out flour for oats, oil for yogurt and added bananas, hmmm recipe for disaster? Thankfully not. These came out so delicious! They have a different texture from your regular muffins let me be honest, they are not as fluffy and airy, in fact they are quite dense after they cool. This takes away nothing from their taste and their texture is very similar to banana bread which makes them quite filling.

Ingredients

1 cup plain Greek yogurt – I used those ones that come in white plastic bowls
3 -4 ripe bananas
2 eggs
2 cups rolled oats (old fashioned or quick)
¼ cup brown sugar
1½ tsp. baking powder
½ tsp. baking soda
Optional -½ cup chocolate chips/ almonds/ walnuts/ raisins or whatever your heart desires.

Directions

  1. Preheat your oven to 200 C. I have a small oven that doesn’t come with degree measurements so I just put it on the highest. Spray your muffin pan lightly with some oil or line it with paper liners
  2. Add all your ingredients but the last ones (toppings) into a food processor or blender. I used my blender but next time I’ll use my food processor. It took a lot for my blender to mix it all as it is a thick batter. I suggest adding the wet items (banana, eggs, yogurt) then slowly incorporating the rest into the mixture, open the blender and stir often. Once it’s all nice and creamy you’re done.
  3. Fill each muffin cavity about 3/4 way full. Sprinkle the tops with your choice of topping (chocolate chips, raisins etc)
  4. Pop the pan in the oven for about 20minutes, insert a toothpick or a clean knife into one to check if it’s done (if it comes out clean, they are ready, sticky, they aren’t)

And that’s it! In four easy steps you have delicious healthy muffins to eat. I had two for breakfast this morning and it’s almost lunch time and I still feel full. The oats keep you fuller for much longer than flour and are much higher in fibre, win win!

    I like baking, but my cakes have never risen more than the level they were when I put them in the oven :(. It’s always one mistake or the other.

    Lol i keep trying sha.

    I never considered myself a “baker” until I realise I bake moe often than I cook. I haven’t made anything in a hot minute though because my oven is not about the right :(

    Interesting use of yogurt as a substitute for oil. I’ve never thought of that. Baking banana bread tomorrow, my first time baking. Never have I been excited to see overripe bananas lol. If I succeed, your healthy banana muffins will be added to my to-do list!

        My oven was too hot (only one setting, and it really doesn’t measure the heat in degrees) so my bread baked in 20 minutes, and burnt badly at the top. I cut off the burnt bit, and I think that because it baked twice as fast, it did not rise enough. But it was really good. I’m encouraged to get more utensils and bake more. Thank you :)

      I bought these ones from “the supermarket” on Cameron road in Ikoyi
